Levin is an innovative brand created by the Villa Noria estate, located in the south of France in Montagac, between the sea and the scrubland. Founded in 2010 by four friends sharing a common vision of viticulture that is more respectful of nature and people, Villa Noria has established itself as a pioneer of organic farming in the Hérault region.

In line with this commitment, Levin represents a new way to enjoy the vine—without alcohol, but with all the pleasure and aromatic richness of a characterful beverage.

Crafted from organic grapes using a unique natural fermentation process without alcohol, Levin’s cuvées offer an authentic, refined, and responsible experience.

Quiet Drink Method

  • Grape Harvest: The organic grapes are harvested at maturity, then the stems are removed.

  • Pressing: The grapes are gently crushed to extract the juice.

  • Alcohol-Free Fermentation: The juice is fermented naturally using a homemade starter culture (a natural blend of yeast and bacteria). This fermentation does not produce alcohol, but develops the aromas.

  • Filtration: The juice is filtered to make it clear and clean.

  • Resting: The beverage rests for a while to develop its flavors, like a real wine, but without alcohol.

  • Bottled: It is then bottled without the addition of artificial flavors or sulfites.

    The result is a fermented, organic, non-alcoholic beverage, complex and refined, available in white, rosé, or red, with a natural aromatic profile derived from the grapes and the terroir.

  • Bottling: It is bottled without added artificial flavors or sulfites.
  • Gentle Carbonation: To achieve the sparkling effect, the bottles go through a special tank where natural carbonation is added.
